Strawberry Parfait
Super simple summer lower carb dessert.

I get asked a lot about different lower carb and/or gluten/dairy free desserts or sweet treats. Fresh berries are a great choice on their own. But sometimes you want a little something more. And if you’re like me-you don’t want it complicated.
Here’s a super simple Strawberry Parfait you can make, modify & enjoy in so many different ways. It only takes about 15 minutes to make from scratch (shorter if you use other ingredients I’ve included in Julie’s Notes). I’ve also included the printable version. Enjoy!
Ingredients
- 2 cups heavy whipping cream
- 1 tablespoon sugar
- 1 teaspoon vanilla
- ½ cup strawberry jam
- Fresh strawberries
- Granola of choice (1-2 tablespoons per serving)
- Waffle bowls
Directions
Slice Strawberries
Slice enough strawberries to top each parfait.Prepare the Whipped Cream
- Combine cream, sugar, and vanilla in a stand mixer bowl or a large mixing bowl (at least 3 quarts) if using a hand mixer.
- Beat on medium for a few minutes until the cream starts to stiffen.
- Whip on high for another few minutes until stiff peaks form. Be careful not to over-whip, or the mix will turn into butter.
Incorporate the Jam
- Using a lower speed, gently mix in the strawberry jam.
Assemble the Parfait
- Spoon the mixture into small bowls or waffle bowls.
- Top with fresh strawberries and a sprinkle of granola.

Julie’s Notes
- Non-Dairy Option: Use coconut cream. Place a few cans of full-fat coconut milk in the fridge for several hours, then skim the solid ‘cream’ off the top. No need to whip it—just add your fruit or jam.
- Berry & Jam Variations: Use any berries or jam you like. You can also skip the jam and use fresh berries alone.
- Fruit Choices: Any fruit works, though watermelon might be tricky…but feel free to experiment!
- Additional Toppings: Try chocolate chips or other ice cream toppings.
- Alternative Bases: Vanilla wafers or graham crackers make great bases.
- Optional Additions: You don’t need waffle bowls, wafers, crackers, or granola for a delicious parfait.
- Fruit Dip Idea: This mixture makes an excellent fruit dip!
- Yogurt Substitute: Use yogurt in place of whipped cream, or a non-dairy yogurt if preferred. Note: Whipping yogurt doesn’t usually work well.
